Riz vinaigré pour sushis
Ingredients for 8 persons :

- 300g of japanese round rice
- 30cl of water
- 4tbsp of rice vinegar
- 2tbsp of castor sugar
- 0.5tbsp of salt

Steps :
- Wash the rice in cold water, stirring well, let drain for 30 minutes in the colander.
- Put the rice and water in a saucepan and put on a tight-fitting lid, bring to a boil over medium heat without ever lifting the lid (relying on your ears). Continue cooking for 5 more minutes.
- Lower the heat to minimum and cook for about 10 minutes. Then remove the cover and let the rice sit for 10 minutes.
- In a saucepan, heat the vinegar, salt and sugar without bringing to a boil. Let cool once the sugar has completely dissolved.
- Place the rice in a hangiri or a salad bowl to cool it. Pour the vinegar preparation over the rice in several batches, mixing gently so as not to crush the grains.
